Does Potassium Sorbate Cause Cancer? A Straight Answer

There’s one study behind this question. Everything else is people quoting people quoting it.

It was published in Food and Chemical Toxicology in November 2002 by Kitano and colleagues, and it’s a real piece of research in a real journal. Here’s what it tested: potassium sorbate mixed with ascorbic acid, in the presence of iron salts. Those three turn up together in food all the time, so the team wanted to know whether they’d react into something harmful during storage and distribution.

They did. The oxidation products showed mutagenicity in an Ames test and a rec-assay, and caused DNA damage.

That’s the finding. Now here’s everything that got dropped on the way to your feed.

What the study didn’t test

It didn’t test potassium sorbate on skin. It didn’t test potassium sorbate on its own. It didn’t test people, or animals, or living tissue of any kind. It tested a reaction product, formed by combining three things under specific conditions, in bacterial assays on a bench.

Ames tests are useful screens. They flag things worth a closer look. They are not cancer findings, and a substance can turn one positive without ever causing a tumor in anything that breathes.

So the honest version of the headline is: “when potassium sorbate is oxidized by vitamin C and iron, the resulting breakdown products can damage DNA in bacteria.” Which is a legitimate food-chemistry question about what happens in a bottle of juice over months, and has almost nothing to say about the preservative in a moisturizer you apply and rinse off years later.

What the regulators concluded

The bodies that actually assess cancer risk have looked at this ingredient, repeatedly, with better tools.

Potassium sorbate isn’t listed as a carcinogen by the International Agency for Research on Cancer, by the US National Toxicology Program, or by California’s Proposition 65, which is famous for listing nearly everything. Long-term animal feeding tells the same story: rats given potassium sorbate at 0.1% of their diet, or 0.3% in their drinking water, for up to 100 weeks developed no tumors. Sorbic acid fed to rats and mice at up to 10% of the diet showed no carcinogenic effect either.

Ten percent of a rat’s total food intake. For context, potassium sorbate in your skincare typically sits under 0.5%, and you’re not eating it.

Europe’s food safety authority re-evaluated the whole sorbate group in 2015 and followed up in 2019. That follow-up did tighten things: the panel revised the acceptable daily intake downward, from the 25 mg per kilogram of body weight set back in 1996 to 11 mg of sorbic acid per kilogram per day. Worth knowing, and worth being clear about what drove it. Reproductive and developmental data prompted the revision, not cancer.

EWG lands in the same place. Its Skin Deep database scores potassium sorbate a 2 and rates cancer risk low.

The thing people should worry about instead

Buried under all that cancer noise is a real, unglamorous finding that affects far more people.

In that same EWG entry, one rating isn’t low. Allergies and immunotoxicity comes back moderate, and potassium sorbate is a recognized skin irritant and occasional contact allergen. Not common. Not dangerous. But real, and much likelier to affect you than anything in the 2002 paper.

If a product containing it makes your skin red or itchy, that’s the mechanism, and switching products is the fix. That’s a useful thing to know, and it’s drowned out completely by a question about cancer that the evidence answers no.

Where it comes from, and why brands like it

Sorbic acid was originally isolated from rowan berries, which is why you’ll see potassium sorbate described as naturally derived. The version in your products is made in a lab, as with almost everything.

Brands reach for it because it works at low levels against mold and yeast, it’s odorless, it’s cheap, and it isn’t a paraben or a formaldehyde releaser. In a market where the preservative section of the label is the part shoppers scan hardest, that combination is hard to beat. It’s usually paired with something else, often sodium benzoate or a chelating agent, because on its own it doesn’t cover bacteria well enough.

The verdict

It doesn’t cause cancer. The study that started this question tested something else, in bacteria, and the regulators with access to real toxicology data have reached the opposite conclusion over decades.

What I’d take from it isn’t reassurance about one preservative. It’s a habit: when an ingredient scare cites a study, look at what the study actually put in the dish. A startling number of them fall apart at exactly that step, and the ones that survive it, like the outbreak behind caprylhydroxamic acid, are the ones worth your attention.
